
| 1/2 lb | angel-hair pasta, uncooked | 225 g |
| 1 | can (14 1/2 oz) tomatoes, diced | 1 |
| 1 | can (15 1/2 oz) black beans | 1 |
| 2 | cans water (use diced tomato can) | 2 |
| 1/3 c | corn, frozen | 90 g |
| 5 oz | smoked turkey sausage, thinly sliced | 140 g |
| 1 tsp | garlic salt | 5 mL |
| 1/2 tsp | red pepper flakes (optional) | 2.5 mL |
| 1Tbsp | Parmesan cheese (optional) | 28 g |
1. Using a colander drain and rinse beans until water runs clear.
2. In a large saucepan, combine all ingredients except optional items.
3. Stir well. Bring to a low boil, cover and reduce heat to simmer.
4. Simmer for 10 minutes.
5. To serve, ladle into soup or chowder bowls.
6. Serve with whole wheat roll and/or leafy green salad.
7. Garnish with red pepper flakes and Parmesan cheese, if desired.
