Hearty Fiesta Cassoulet

Ingredient List

1/2 lb angel-hair pasta, uncooked 225 g
1 can (14 1/2 oz) tomatoes, diced 1
1 can (15 1/2 oz) black beans 1
2 cans water (use diced tomato can) 2
1/3 c corn, frozen 90 g
5 oz smoked turkey sausage, thinly sliced 140 g
1 tsp garlic salt 5 mL
1/2 tsp red pepper flakes (optional) 2.5 mL
1Tbsp Parmesan cheese (optional) 28 g

Directions

1. Using a colander drain and rinse beans until water runs clear.
2. In a large saucepan, combine all ingredients except optional items.
3. Stir well. Bring to a low boil, cover and reduce heat to simmer.
4. Simmer for 10 minutes.
5. To serve, ladle into soup or chowder bowls.
6. Serve with whole wheat roll and/or leafy green salad.
7. Garnish with red pepper flakes and Parmesan cheese, if desired.
