Teriyaki Chicken and Beans

Beans are a delicious alternative to rice or pasta in this calorie conscious, oriental-influenced recipe
 

Ingredient List

2 tbsp soya sauce 25 mL
2 tbsp lemon juice 25 mL
1 clove garlic, minced 1
2 tsp dry mustard 10 mL
1/2 tsp ground ginger 2 mL
1/4 tsp pepper 1 mL
1 tbsp vegetable oil 15 mL
4 boneless, skinless, chicken breast halves 4
1 can (14 oz./398 mL) Beans with Pork in Molasses Sauce 1
4 green onions, sliced in 1/2 inch (2 cm) pieces 4

Directions

Combine soya sauce, lemon juice, garlic, mustard, ginger and pepper; set aside. In frying pan, heat oil over medium-high heat. Add chicken; brown on both sides. Drain off fat, if necessary. Reduce heat, stir in sauce mixture. Cover and simmer 10 to 15 minutes or until chicken is no longer pink. Stir in beans and green onions; heat through. Serve with sauteed snow peas and red peppers, if desired.
